  • 1 cup non-fat ricotta cheese
  • 1 cup skim milk
  • 1 tablespoon low-fat butter
  • 1/8 teaspoon ground white pepper


a. Cook the pasta according to the procedure of the package. Drain it well then put the pasta back to the cooking pot and cover it.

b. While cooking the pasta, mix all the sauce ingredients in a food processor or blender and process until it gets smooth.

c. Pour the mixed sauce ingredients into 1 quart saucepan. Place it over low heat, stir constantly until all of the mixture gets heated well.

d. Serve amount of pasta to be eaten then pour cooked sauce mixture into it. Add Parmesan cheese and mix it well.

3. Golden Mashed Potato

  • 2 lbs. potato (Peeled and Sliced into 1 inch chunks)
  • ½ teaspoon salt
  • 2 tablespoons low fat butter
  • ¼ cup milk
  • ¼ teaspoon ground black pepper
  • Low-fat Parmesan cheese


a. Put peeled potatoes into a saucepan, add water until the potatoes is covered then add the salt. Cook it until it gets boiled then lower the heat into simmer level, cover it.

Check when it’s done, around 20 mins. See if potatoes are soft already, poke it with fork.

b. Melt butter in a pan on the stove. Drain out the water from the potatoes, then put it in a large bowl.

c. Add melted butter on the potato then mash the potato with a potato masher until it’s well mashed. Add milk and add black pepper then mix it well with a big spoon.

d. Serve on a plate and grate some Parmesan cheese on top using a cheese grater.

4. Tasty Tuna Sandwich

  • 1 can of tuna chunks
  • 1 hard-boiled egg (chopped)
  • ¼ cup mayonnaise
  • 8 slices whole grain bread
  • Lettuce leaves
  • 1 tomato (sliced)
  • 1 onion (sliced)


a. In a bowl, combine all ingredients (except bread & lettuce) then mix them well.

b. Put the mixture in the refrigerator including the lettuce for a few minutes to chill. You can also put it in the freezer instead for faster chilling but don't let it get frozen.

c. Put the lettuce on top of bread then spread the tuna mixture.

d. Cover the lettuce and tuna spread with another slice of bread.
